Quick Tofu Stir Fry

Cook time: 8 minutes


• 1 cup firm tofu, diced
• 1 cup broccoli, chopped
• 1 Tbs reduced sodium soy sauce
• 2 tsp natural peanut butter
• 1 cup brown rice cooked


• Heat a large skillet or wok over high heat
• Add canola oil and tofu and cook for 30 seconds
• Add broccoli and soy sauce to wok. Cook, tossing continuously for 3 to 4 minutes
• Reduce heat to medium, add peanut butter and toss until peanut butter has melted and is distributed throughout
• Remove from heat, add brown rice, toss and serve
