Veggie Scramble

• 2 large eggs
• 2 large egg whites
• 1/4 cup bell pepper, chopped
• 1/4 cup mushrooms, sliced


• Heat a small nonstick skillet over medium heat
• In a small bowl, whisk together eggs and egg whites until fluffy. Set aside
• Spray pan with nonstick spray. Add egg mixture and scramble gently with a spatula for 1 to 2 minutes as eggs begin to set
• Add mushrooms and peppers, season with salt and pepper and continue to scramble until eggs are cooked
